Basically when it comes to the veggies I use whatever I have in the fridge. Here are some suggestions -
Celery, green peppers, carrots, mushrooms, onions, spinach, zucchini, yellow squash, tomatoes.
For the pasta I use either spaghetti noodles broken into about 3 inch sections or spirals. I love the spirals that are multi-colored.
Salad Supreme Seasonings
Pepperoni, sliced olives, sliced dill pickles, kidney beans.
Cook your pasta according to package directions. Chop up your veggies. Drain and cool the pasta. Place the pasta and veggies in a bowl. Now my favorite things to add -
Pepperoni, sliced olives, sliced dill pickles, kidney beans. Use Italian Dressing. Everyone has a different amount they like. Some like it more wet, some like it more dry. My secret though is Salad Supreme Seasonings. I use about 1/4 of the bottle for my pasta salad. Serve cold.
I like using a square frying pan. They can be done in a round one, but it makes it a little harder.
Take 2 eggs and whip them together. I used onion, peppers, and sausage that I browned beforehand. Have your frying pan on medium-high. Add 1 Tbsp butter spread it around. Pour egg mixture onto the frying pan. Roll the pan around so the mixture reaches all the edges. Take the pepper, onion and sausage mixture and lay it down the middle of the egg mixture. You are going to fold the eggs into thirds. Take one side and flip it over the middle. Take the other side and flip it over the middle too. Now take the entire thing and flip it over. If this is too intimidating, cut it in half. Once it’s all flipped take cheese slices and put on top. Add 3 drops of water and cover with a lid. This will create steam to melt the cheese. Be careful you don’t use too much water or it will make it slimy.
I love this vegetable dish. Very easy to make and very healthy for the family. You can change it up easily to the veggies you prefer. This time I used -
- Green Peppers
- Yellow Squash
- Onion if you prefer you can use dried chopped onions
- 4 slices of Mozzarella cheese
- Garlic Salt
- Italian Seasonings
- Olive Oil
Slice up the veggies except for the green peppers and onion, these you can chop. Spray 9×9 pan with olive oil spray. Layer by item. 1 layer tomatoes, 1 layer zucchini and so on. After 2 layers sprinkle with garlic salt Italian Seasonings and Olive Oil. When done top with 4 slices of Mozzarella Cheese. Sprinkle again with Garlic Salt and Italian Seasonings.
Bake at 350 for 1/2 an hour.
