Potatoes and Onions on the Grill

  • 1 Potato per person
  • Butter
  • 1 Onion – Sliced
  • Salt and Pepper
  • Aluminum Foil


IMG_20140427_104300Clean potatoes. Slice them up, but keep them separated from other sliced potatoes. Microwave 2 at a time for 4 minutes. They will be hot when they come out so be careful. Tear off a piece of foil big enough to wrap around 1 potato and big enough to roll up and seal. Place potato on foil Put a chunk of onion between each slice. Put a pat of butter on top and salt and pepper to taste. Roll up foil down the center of the potato and roll up the ends of the foil. Grill on high for 1/2 and hour or until they feel soft when you squeeze them with a pair of tongues. Turn the potatoes after 15 minutes.
You don’t need to microwave, that just makes them cook faster on the grill. You can even put these into a campfire. Just throw them in.

Jamaican Jerk Chicken Wings

jamaican jerk wingsI love this Walkerswood Jamaican Jerk Seasoning, I normally don’t recommend a brand, but this is amazing! I bought it at a specialty store, but it can also be found on Amazon. I use the Mild version. If you like more heat that is also available.

I take a gallon sealable bag. Add 2 Tlb Jerk Sauce, add chicken wings, seal bag. Squish around until it is evenly coated. Marinate for at least an hour. Cook on grill or under broiler in oven. If you use broiler coat broiler pan with non-stick spray. Place the oven rack on the second slot down from the top. Broil on each side for 10 minutes.


Marinade for Chicken or Steak

  • 1 – 1 gallon plastic storage bag
  • 1/2 C Light Olive Oil
  • 1/4 C Vinegar or Lemon Juice
  • 1 tsp Ground Black Pepper
  • 2 tsp Lawry’s Seasoned Salt

Add all ingredients in the gallon bag. Add meat either chicken or steak. Zip the bag shut and mix the marinade up and all over the meat. Refrigerate for at least an hour. I take the bag every so often and move the meat around to completely coat the meat with marinade.

Grill however you prefer to grill the choice of meat. I made 4 chicken thighs here. I cooked them on high on my grill for about 1/2 and hour. Every grill is different so make sure to cook until the juices turn clear and the meat thermometer reads 160 degrees.

The Salad consists of organic salad greens, tomatoes, zucchini, yellow squash, bacon bits and “shaker cheese”. You know the kind in a plastic bottle. not parm cheese with the green lid, go to the cheese section and liik for the bottle with the black lid – MUCH better. And we topped it with ranch dressing.
