My Mama’s Banana Bread

Never dry, always moist! I promise!

Ingredients

1/2 C Softened Butter (1 stick)
1 C Sugar
2 Eggs
1 C Mashed Ripe Bananas
1 tsp Lemon Juice
5 tsp Baking Powder
1/2 tsp Salt
2 C Flour

Directions

Cream butter and sugar together. Beat eggs until light and add. Mash bananas and add. Add lemon juice. Mix baking powder, salt and flour quickly into mixture. Bake in greased bread pan at 375 for 45 minutes.  Use a toothpick in the middle. When it comes out clean the bread is done. Hint ****** – Touch the top of the loaf(yes, with your bare finger) – if it is “squishy” it will fall in the middle. Let it cook a few more minutes until the top feels more firm to the touch.

Holiday Cranberry Bread

This recipe is a family traidtion for us, we make it every Christmas. Try it out with the whipped type of cream cheese, it is the easiest to spread on the bread.

We hope you enjoy this cranberry bread recipe as much as our family has!

Ingredients:

2 C Flour
1 C Sugar
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
3/4 C Orange Juice
2 Tbs Oil
1 Egg
1/2 bag Cranberries

Directions:

Combine all dry ingredients. Stir in all remaining ingredients. Add cranberries last (remember to rinse them). Bake at 350 degrees for 50-60 minutes. Take a toothpick and stick it in the middle, when it comes out clean the bread is done.

Puff Balls

This recipe my sister used in Middle School Home-Ec class. I managed to save it all these years. Puff balls can be tricky, but if middle schoolers can do it you can too! Click here to see 11 ideas for  puff ball fillings!

Ingredients:

  • 1/2 C water
  • 1/4 C butter
  • 1/2 C flour
  • 2 eggs

Directions:

Heat butter and water to boiling point. Mix in flour all at once stirring constantly until it leaves the sides of the pan in a ball. Remove from stove. Cool 5 minutes. This is very important or you will have scrambled eggs! Beat in eggs one at a time until smooth. It takes some time just keep mixing! Whip until velvety.
Drop level teaspoon-fulls onto parchment paper on a cookie sheet.
Bake at 425 for 15 min.
The best part about these puff balls is you can be very creative with what you decide to put inside. Slice them in half when cool and fill.
Examples – egg salad, chicken salad, crab salad, cream cheese and olives, Check out my Chicken Cheese Spread recipe that’s good in there too. I’ve even put chocolate pudding inside and sprinkled with confectioners sugar!
