Ingredients & Directions:
2 – 20 oz can of yams or sweet potatoes
1 C Sugar
1 tsp Vanilla
1/3 C Milk
1/2 C Butter
Blend these ingredients in a bowl with a hand held mixer.
1 C packed Brown Sugar
1/3 C Flour
1/3 C melted Butter
1 C finely chopped Pecans
Mix together with a spoon
Optional – sprinkle mini-marshmallows over pecan topping.
Pour yam mixture into an 11×9 cooking dish. Sprinkle topping over evenly.
Bake at 350 for 30 minutes.
6 Chicken Legs (you can actually use any chicken pieces you prefer)
1/4 C Lemon Juice
1/4 C Mustard
1 Tbsp Olive Oil
1 Tbsp Italian Seasoning
1 Tbsp Honey
1 Tbsp Vinegar
2 tsp packed Brown Sugar
1/2 tsp Minced Garlic
1/2 tsp Salt
1/4 tsp Black Pepper
Place chicken in a 1 gallon storage bag. In a bowl mix the remaining ingredients. Pour mixture over chicken and seal the bag. Leave in refrigerator for at least and hour to marinate. Place chicken in a baking dish and bake at 375 for 50-60 minutes until done. Do not put the marinade over the chicken unless you line the pan with aluminum foil. As you can see in one of the pictures. It turned into a black gooey mess.

Have you ever bought apples only to find out they are pretty old dry and grainy? Well you can use them for baked apples!
- 1 Apple
- 1 Tbsp Butter
- 2 Tbsp Brown Sugar
Core an apple with your potato peeler. Place in a microwave bowl. Shove the butter down the center hole. Fill the rest of the hole with the brown sugar.
Microwave for about 2 1/2 minutes. Microwave 1 minute at a time and check for doneness. When the meat of the apple is soft it is done.
Prep time – 2 minutes – cooking time 2 1/2 minutes – total time – 4 1/2 minutes
Serves – 1 apple per person
- 4 boneless skinless chicken breasts
- 1 small can of tomato sauce or diced tomatoes which ever you prefer
- 1 Cup shredded cheddar cheese
- 1 tsp dried onion flakes
- 1 tsp garlic salt
- 1 tsp Everglades Seasoning (or lawrey’s, or Cajun or whatever you prefer
- 1/2 small can Mild Rotelle
Pour a tiny amount of tomatoes in 9×9 pan. This is so the chicken doesn’t stick. Place the chicken on top. Pour the rest of tomatoes and Rotelle on top. Sprinkle onion flakes, garlic salt, seasonings. Top with cheese. Bake at 350 for 30-45 minutes or until 160 degrees on meat thermometer.
Prep time – less than 5 minutes – cook time – 45 minutes – total time 50 minutes
Serves – 4
This is a tasty dish for the winter time. This recipe can also be changed up easily to make Ham and Scalloped Potatoes if you wish.
- Ham 2 Cups
- Penne Pasta 2 Cups dry pasta – (Pronounced Pen-nay)
- Mozzarella Cheese 1 Cup – shredded
- Broccoli Florets 1 Cup (optional)
- Salt and Pepper to taste

Start with my Cream Sauce recipe. Cook the Penne Noodles. After the cream sauce is done, add the Ham, Penne Pasta, Mozzarella Cheese and Broccoli. Pour into an 11×9 greased dish. Top with my Crouton recipe. Bake at 350 for 1/2 hour.
If you prefer to make Ham and Scalloped Potatoes, omit the broccoli and mozzarella cheese and swap the Penne Pasta for sliced potatoes. This will take longer to cook the raw potatoes. So cook it for an hour.
I love this vegetable dish. Very easy to make and very healthy for the family. You can change it up easily to the veggies you prefer. This time I used -
- Green Peppers
- Yellow Squash
- Onion if you prefer you can use dried chopped onions
- 4 slices of Mozzarella cheese
- Garlic Salt
- Italian Seasonings
- Olive Oil
Slice up the veggies except for the green peppers and onion, these you can chop. Spray 9×9 pan with olive oil spray. Layer by item. 1 layer tomatoes, 1 layer zucchini and so on. After 2 layers sprinkle with garlic salt Italian Seasonings and Olive Oil. When done top with 4 slices of Mozzarella Cheese. Sprinkle again with Garlic Salt and Italian Seasonings.
Bake at 350 for 1/2 an hour.
This is an easy recipe great for cold weather.
You will start with my Cream Sauce recipe. Make it in a large sauce pan. Make noodles either spiral (Rotini) or egg noodles which ever you prefer. Use 2 cups of dry noodles cook according to directions. Add to cream sauce along with 1 drained can of tuna and 1 cup of frozen peas or 1 can of canned peas. Pour into a 9×9 pan.
Add my homemade croutons to the top and bake at 350 degrees for 1/2 hour to 45 minutes.
