Puff Balls

puff balls

This recipe my sister used in Middle School Home-Ec class. I managed to save it all these years. Puff balls can be tricky, but if middle schoolers can do it you can too! Click here to see 11 ideas for  puff ball fillings!

  • 1/2 C water
  • 1/4 C butter
  • 1/2 C flour
  • 2 eggs

puff pastry

Heat butter and water to boiling point. Mix in flour all at once stirring constantly until it leaves the sides of the pan in a ball. Remove from stove. Cool 5 minutes. This is very important or you will have scrambled eggs! Beat in eggs one at a time until smooth. It takes some time just keep mixing! Whip until velvety.
Drop level teaspoon-fulls onto parchment paper on a cookie sheet.
Bake at 425 for 15 min.
The best part about these puff balls is you can be very creative with what you decide to put inside. Slice them in half when cool and fill.
Examples – egg salad, chicken salad, crab salad, cream cheese and olives, Check out my Chicken Cheese Spread recipe that’s good in there too. I’ve even put chocolate pudding inside and sprinkled with confectioners sugar!

I was contacted by Okeechobee The Magazine to do a video and article for their spring issue. We settled on our most popular post which is Puff Balls. This video will show you  step by step directions on how easy these really are to make. You will be a hit at the next party you make them for!
