  • My Chili Recipe
  • Spaghetti Noodles (or any noodle you have on hand)
  • Shredded Cheddar Cheese

Try this sometime. It’s so easy and really makes such a nice meal. Use my chili recipe or chili from a can. Make spaghetti noodles. Put them on a plate, Put chili on top of noodles and add shredded cheese. This is also a great way to serve any leftover chili in a different way for a later night. Chili is also great to freeze the extras and then just thaw them out whenever you need an easy dinner!

  • 1 Med Onion chopped
  • 1 Pound Hamburger browned and drained

  • 1 Tbsp Cumin
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt
  • 1/2 tsp Crushed Red Pepper (this is for heat, you can omit it if you don’t like it hot”

Brown and drain the hamburger. Add the onion and brown. Pour these into a soup pan and add all remaining ingredients. Stir all together. Let this simmer on low for a few hours on Med-Low ,stirring occasionally. It’s even better if after that you let it cool and refrigerate over night. This lets the spices meld together better. If you can stand to wait that long!

Potatoes and Onions on the Grill

griled potatoes in foil

  • 1 Potato per person
  • Butter
  • 1 Onion – Sliced
  • Salt and Pepper
  • Aluminum Foil

IMG_20140427_104300Clean potatoes. Slice them up, but keep them separated from other sliced potatoes. Microwave 2 at a time for 4 minutes. They will be hot when they come out so be careful. Tear off a piece of foil big enough to wrap around 1 potato and big enough to roll up and seal. Place potato on foil Put a chunk of onion between each slice. Put a pat of butter on top and salt and pepper to taste. Roll up foil down the center of the potato and roll up the ends of the foil. Grill on high for 1/2 and hour or until they feel soft when you squeeze them with a pair of tongues. Turn the potatoes after 15 minutes.
You don’t need to microwave, that just makes them cook faster on the grill. You can even put these into a campfire. Just throw them in.

I like using a square frying pan. They can be done in a round one, but it makes it a little harder.
Take 2 eggs and whip them together. I used onion, peppers, and sausage that I browned beforehand. Have your frying pan on medium-high. Add 1 Tbsp butter spread it around. Pour egg mixture onto the frying pan. Roll the pan around so the mixture reaches all the edges. Take the pepper, onion and sausage mixture and lay it down the middle of the egg mixture. You are going to fold the eggs into thirds. Take one side and flip it over the middle. Take the other side and flip it over the middle too. Now take the entire thing and flip it over. If this is too intimidating, cut it in half. Once it’s all flipped take cheese slices and put on top. Add 3 drops of water and cover with a lid. This will create steam to melt the cheese. Be careful you don’t use too much water or it will make it slimy.

The directions are on the back and make it so easy to follow. I love making soup on the weekends when I’m home and can watch it and stir on occasion. Serve with some whole grain buttered bread or make drop biscuits.

Fried Cheesy Cauliflower Patties

Fried Cauliflower patties

Fried Cauliflower with cheese Fried Cauliflower with chicken

  • 1 C Mashed Cauliflower
  • 1 egg
  • 1 C Shredded Cheddar Cheese
  • salt and pepper to taste
  • 1/2 tsp Dried Onion

Cut the florets off of the stem of the cauliflower. Put in a pan and cover with water. Boil for about half an hour until they are soft. Drain and mash like mashed potatoes. Do not use a food processor use a potato masher. Let mixture cool off a little. Add the remaining ingredients.
Fry in butter or oil. I like coconut oil, it has no cholesterol and is VERY good for you. It has no flavor because it’s made from the shell of the coconut. Drop by spoonful into non-stick frying pan.
Fry until golden brown, actually the darker the better. I found a bit above medium is a good temp, you can get them brown without burning on a higher flame.
My head of cauliflower had 3 cups of mashed. So I put the remaining in the freezer for a future dinner.
1/2 hour prep to cook the raw cauliflower
15 min to fry them
Serves 4 – makes about 8 pancakes
