1/2 C Softened Butter (1 stick)
1 C Sugar
1 C Mashed Ripe Bananas
1 tsp Lemon Juice
5 tsp Baking Powder
1/2 tsp Salt
2 C Flour
Cream butter and sugar together. Beat eggs until light and add. Mash bananas and add. Add lemon juice. Mix baking powder, salt and flour quickly into mixture. Bake in greased bread pan at 375 for 45 minutes. Use a toothpick in the middle. When it comes out clean the bread is done. Hint ****** – Touch the top of the loaf(yes, with your bare finger) – if it is “squishy” it will fall in the middle. Let it cook a few more minutes until the top feels more firm to the touch.
