My Mama’s Banana Bread

Never dry, always moist! I promise!

Ingredients

1/2 C Softened Butter (1 stick)
1 C Sugar
2 Eggs
1 C Mashed Ripe Bananas
1 tsp Lemon Juice
5 tsp Baking Powder
1/2 tsp Salt
2 C Flour

Directions

Cream butter and sugar together. Beat eggs until light and add. Mash bananas and add. Add lemon juice. Mix baking powder, salt and flour quickly into mixture. Bake in greased bread pan at 375 for 45 minutes.  Use a toothpick in the middle. When it comes out clean the bread is done. Hint ****** – Touch the top of the loaf(yes, with your bare finger) – if it is “squishy” it will fall in the middle. Let it cook a few more minutes until the top feels more firm to the touch.

Cherry Turnovers

Ingredients:

1 pkg Pie Crust – the kind already made up, you just roll it out
1 can Pie Filling – any flavor you like
Sugar

Directions:

IMG_20141117_092147661IMG_20141117_093053978  IMG_20141118_093934376Let the dough sit out and become room temperature. Roll it out flat. Use a cup or glass to cut out circles. Take the leftover dough and make into a ball. Sprinkle flour on counter and roll out dough again with flour on a rolling pin. Cut out more circles. Repeat this until all dough is used up. 2 pie crusts make about 24 turnovers.
Place 1 cherry into the middle of the circle. Fold over. Push down the edge to stick together and use a fork to pinch the sides together.  take a drop of water and make the top a little wet. Sprinkle with sugar. Make a small slit on the top, this will allow the steam to escape and the filling won’t oooze out. (You can see in the pics I forgot to do this!)

It is easier to clean up if you place them on parchment paper on a cookie sheet and bake at 350 for 12-15 minutes or until golden brown.

Chicken Salad – Salad

I just love putting chicken salad on top of a salad! It’s filling and refreshing. Make a salad any way that you like and plop your favorite chicken salad on top. In this picture I used -

Salad -

Baby Salad Greens
Yellow Squash – chopped
Zucchini  – chopped
Tomato – chopped
Celery – chopped
Hard Boiled Egg – sliced
Home Made Croutons 

Chicken Salad -

1 Can of White Chicken Breast ( or 1 grilled chicken breast chopped up)
Celery – chopped
Dill Pickle Spear – chopped
Mayonnaise – to taste
Salt and Pepper – to taste

I plate the salad, place the egg on the side and plop a scoop of chicken salad on top. Sprinkle the croutons around. Now use whatever salad dressing you like. I like Ranch on this. Enjoy!

Holiday Sweet Potato Casserole

Ingredients & Directions:

2 – 20 oz can of yams or sweet potatoes
1 C Sugar
2 Eggs
1 tsp Vanilla
1/3 C Milk
1/2 C Butter
Blend these ingredients in a bowl with a hand held mixer.

Topping -
1 C packed Brown Sugar
1/3 C Flour
1/3 C melted Butter
1 C finely chopped Pecans
Mix together with a spoon

Optional – sprinkle mini-marshmallows over pecan topping.

Pour yam mixture into an 11×9 cooking dish. Sprinkle topping over evenly.
Bake at 350 for 30 minutes.

 

 

Holiday Cranberry Bread

This recipe is a family traidtion for us, we make it every Christmas. Try it out with the whipped type of cream cheese, it is the easiest to spread on the bread.

We hope you enjoy this cranberry bread recipe as much as our family has!

Ingredients:

2 C Flour
1 C Sugar
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
3/4 C Orange Juice
2 Tbs Oil
1 Egg
1/2 bag Cranberries

Directions:

Combine all dry ingredients. Stir in all remaining ingredients. Add cranberries last (remember to rinse them). Bake at 350 degrees for 50-60 minutes. Take a toothpick and stick it in the middle, when it comes out clean the bread is done.

Roasted Pumpkin Seeds

pumpkin seed snackAfter you have carved the pumpkin, don’t throw away the seeds. Pick them out of the messy pumpkin insides. Rinse them with water to get the slime off, drain with a colander. Fry in a non-stick pan on Medium heat with a little butter in the pan. Sprinkle with garlic salt to taste. It takes a good bit of garlic salt. Cook until crisp and not chewy. they should turn a golden brown. Great warm or cold. So good for you!

My Mama’s Apple Crisp

This is the actual picture of my mother’s recipe from her churches cookbook in 1975!

We do change it up some of course!

Ingredients:

10 tart apples – Macintosh are great
3/4 C sugar
1/2 tsp cinnamon
1/2 tsp Nutmeg
1/2 Lemon or 2 Tbsp Lemon Juice
3/4 C Water

Topping
3/4 C sugar
3/4 C Flour
1/2 C Butter

Directions:

Slice apples into 11×9 baking dish. Sprinkle with sugar, cinnamon and nutmeg. Add water and lemon juice. Top with topping and bake 400 degrees for 1 hour.
What she didn’t tell you in the recipe though was the two secrets to making the best Apple Crisp. I am going to share that with you now.

The First SECRET – double the topping. After all that is the best part!
The Second SECRET – use cold butter for the topping – its supposed to be crumbly not smooth like batter.

Sausage Pesto Linguini

Ingredients:

4 Italian Sausages (sweet or mild, it’s up to you)
1/2 C Pesto (find it in the cheese section in the grocery store)
1/2 C Milk/Cream
1/2 C Water from making the Liguini
1 handful Snow Peas or 1 C Frozen Peas
1/2 box Linguini

Directions:

Cook the sausage in a frying pan with 1 Tbs of olive oil. Cook through. While doing this cook the Linguini according to package directions. Remove from sausages from pan. In same pan add remaining ingredients and stir well. Add linguini when done. Serve sausages on the side.

Antipasto Submarine Sandwich

Hogie, Sub, Submarine whatever you call it – this is amazing! A friend told me about this, so it’s not an original recipe from me or my family, but I am making an exception and am going to share it because you won’t believe it!

Ingredients:

Sub rolls
Anitpasto salad
Cheese

Directions:

Go to your deli at the grocery. Buy antipasto salad. You know, it has meats, cheeses, olives and pickled veggies. Where I live Publix does not carry it with meats and cheeses. But Win-dixie does. So look around. Now go to the bakery in the grocery store and buy sub rolls. Slice the sub rolls in 1/2 with the middle still attached. Put on the antipasto salad and broil until the cheese is melted and the roll toasty! That’s it! WOW you are going to love me when you are done eating! Enjoy!

Pasta Salad

Basically when it comes to the veggies I use whatever I have in the fridge. Here are some suggestions -
Celery, green peppers, carrots, mushrooms, onions, spinach, zucchini, yellow squash, tomatoes.
For the pasta I use either spaghetti noodles broken into about 3 inch sections or spirals. I love the spirals that are multi-colored.
Salad Supreme Seasonings
Pepperoni, sliced olives, sliced dill pickles, kidney beans.

Directions:

Cook your pasta according to package directions. Chop up your veggies. Drain and cool the pasta. Place the pasta and veggies in a bowl. Now my favorite things to add -
Pepperoni, sliced olives, sliced dill pickles, kidney beans. Use Italian Dressing. Everyone has a different amount they like. Some like it more wet, some like it more dry. My secret though is Salad Supreme Seasonings. I use about 1/4 of the bottle for my pasta salad. Serve cold.
